  1. Finely chop or dice the tomatoes, shallots, bell pepper, jalapeno, and garlic. Stir together in a medium size bowl.
  2. Add lemon or lime juice, vinegar, salt and pepper. Stir and serve. The longer it sits, the more time the flavors will have to blend.
